The Maritimes is a place famous for its flavours – lobster. Mussels. Oysters. Blueberries. We know these flavours; they’re woven into our memories. But they’re just the front lines. If you scratch the surface of this place or peel back the layers, new tastes emerge: Haskap berries, with their indigo skins and rich, complex notes, thrive in our acidic soil. Dried sugar kelp, harvested from the Bay of Fundy, adds an umami blast to food. Wild Nettles, foraged in the late spring, are scratchy to the touch, but nourishing and flavourful. And then there’s the Halifax Donair, not indigenous to the area, but definitely part of the fabric of the city.
